If you've bought makhana (fox nuts / lotus seeds) before, you've probably seen size grades listed on the pack โ but rarely explained. "4 Suta" is the grade we use for Sanvi Heritage Makhana, sourced from Darbhanga, Bihar, the heart of India's makhana-growing belt. Here's what that actually means, and why it matters when you're buying.
What "Suta" Means
Suta is a traditional unit used by makhana traders in Bihar to grade popped fox nuts by size, roughly corresponding to how many makhana lay end-to-end across a fixed measure. The scale generally runs from 1 Suta (the smallest, most broken pieces) up to 6 Suta and above (the largest, most uniform puffs). The higher the Suta number, the bigger and more visually uniform the individual makhana โ and, generally, the higher the price.
Where 4 Suta Sits
4 Suta makhana sits in the upper-middle of this range โ large enough to have that satisfying puffed, crunchy bite makhana is known for, without the premium pricing of the largest 6+ Suta grades that are mostly sold for gifting or export. For everyday eating, roasting, and cooking, 4 Suta is the grade most quality-conscious households and retailers actually reach for โ the sweet spot between size and value.
Why Darbhanga
Darbhanga and the surrounding Mithila region of Bihar produce the large majority of India's makhana, grown in shallow ponds from the Euryale ferox plant. The seeds are hand-harvested, sun-dried, and then hand-popped over heat by skilled local artisans โ a labour-intensive process that hasn't changed much in generations, and one reason makhana carries a GI (Geographical Indication) tag tied to Bihar's Mithila region.
How to Judge Quality Yourself
When you open a pack of makhana, look for: uniform white-to-cream colour (yellowing suggests age or poor storage), minimal broken pieces, and a light, airy crunch when you bite one โ not a dense, chewy texture, which suggests it wasn't dried or popped properly. Our 4 Suta grade is sorted by hand to keep broken pieces to a minimum.
How We Store It
Makhana is naturally low in moisture, which is part of why it keeps well โ but it can pick up humidity if left open, turning soft and stale. We pack our 4 Suta grade in sealed pouches straight after sorting, and recommend transferring any opened pack to an airtight container, using it within a couple of weeks for the best crunch.
